Halibut Citrus Almondine

  • ½ cup blanched slivered almonds
  • 2 tablespoon olive oil
  • 1/3 cup thinly sliced green onions
  • ½ teaspoon minced garlic
  • ½ teaspoon grated Texas Red Grapefruit peel
  • 4 (about 8 ounces each) North American Halibut steaks
  • 3 Texas Red Grapefruit
  • Salt and pepper, to taste

In small skillet, sauté almonds in olive oil until lightly browned, about one minute. Remove from heat and stir in green onions, garlic and grapefruit peel. Arrange fish in shallow baking pan. Juice one grapefruit; pour over fish. Cover fish evenly with almond mixture. Bake in center of oven at 425 degrees for 10-12 minutes, until fish flakes when tested with a fork. Meanwhile, peel and section remaining grapefruit. Place fish on platter; season with salt and pepper. Surround fish with sections and drizzle with pan juices to serve. Yield: 4 servings.
